Sunday morn' fare

Ricotta Pecan Pancakes with Thyme infused Maple Syrup

I really enjoyed this recipe.  I am not much for pancakes, mainly because I don't like eating sweets for breakfast, but these were not sweet at all.  They were very light and the hint of lemon zest in the pancakes mingled well with thyme syrup and had a very nice flavor.
